Heat 1 tablespoon of olive oil in a large pot or Dutch oven over medium heat.

Add 1 1/2 pounds of chicken breast to the pot and cook until browned on all sides, about 6-8 minutes. Remove the chicken from the pot and set it aside. Once cool enough to handle, shred the chicken.

Add the chopped yellow onion, carrots, and celery stalks to the same pot. Cook until the vegetables are softened, which should take about 5-7 minutes, stirring occasionally.

Add the 3 minced cloves of garlic to the pot and cook for 1 minute more until fragrant.

Pour in 4 cups of chicken broth and bring the mixture to a simmer.

Stir in 1 cup of half & half, 1 teaspoon of dried thyme, 1 teaspoon of dried rosemary, 1/2 teaspoon of black pepper, and 1/4 teaspoon of red pepper flakes. Bring the mixture back to a gentle simmer.

While the broth is simmering, prepare the dumpling dough. In a separate medium bowl, combine 1 cup of all-purpose flour, 2 teaspoons of baking powder, and 1/2 teaspoon of salt.

Gradually add 1/2 cup of milk to the dry ingredients, stirring until just combined. Be careful not to overmix the dough; a few lumps are fine.

Drop spoonfuls of the dumpling dough into the simmering broth. Ensure there is enough space between dumplings as they will expand.

Cover the pot and cook for 15-20 minutes, or until the dumplings are cooked through and fluffy. Do not lift the lid during this time to allow the dumplings to steam properly.

Stir in the shredded chicken and 1 tablespoon of fresh chopped parsley. Season the dish with salt and black pepper to taste.
