Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.

Mash the ripe bananas thoroughly using a fork on a plate until smooth.

Add the unsweetened coconut flakes to the mashed banana and mix until fully combined.

Portion the mixture onto the parchment-lined baking sheet using a small ice cream scoop. Flatten each portion into a cookie shape with your fingers.

Use the back of a chopstick or a small spoon handle to create a small hole in the center of each cookie.

Bake the cookies for 12 to 15 minutes, or until they are golden brown and slightly crispy.

While the cookies are baking or cooling, melt the dark chocolate chips. This can be done in a microwave in 30-second intervals, stirring in between, or in a double boiler.

Once the cookies have cooled slightly, dip the bottoms of the baked cookies into the melted chocolate.

Drizzle the remaining melted chocolate over the top of the cookies using a spoon.

Sprinkle with flakey sea salt to taste.

Chill the cookies in the freezer for 10 minutes to set the chocolate, then enjoy.
