In a large bowl, combine the chicken pieces with yogurt, ginger paste, garlic paste, lemon juice, garam masala, turmeric powder, cayenne pepper, and 1/2 teaspoon salt. Mix well to ensure all chicken is coated. Cover the bowl and refrigerate for at least 1 hour, or preferably 4-6 hours, to marinate.

Heat 2 tablespoons of unsalted butter in a large skillet or Dutch oven over medium-high heat. Once the butter is melted and shimmering, add the marinated chicken in a single layer, working in batches if necessary to avoid overcrowding the pan. Sear the chicken for 3-4 minutes per side until lightly browned. The chicken does not need to be cooked through at this stage. Remove the seared chicken from the pan and set aside.

Reduce the heat to medium. Add the chopped yellow onion to the same pan and sauté for 5-7 minutes until softened and translucent. Add the ginger paste and garlic paste and cook for another 1-2 minutes until fragrant.

Stir in the crushed tomatoes, garam masala, cumin powder, coriander powder, and sugar. Bring the mixture to a simmer, then reduce heat to low, cover, and cook for 10-15 minutes, stirring occasionally, to allow the flavors to meld.

Carefully transfer the tomato mixture to a blender and blend until completely smooth. Alternatively, use an immersion blender directly in the pot. Return the smooth sauce to the pan.

Add the seared chicken back into the sauce. Stir in the heavy cream and 1/2 teaspoon salt (or to taste). Bring the sauce to a gentle simmer and cook for 10-15 minutes, or until the chicken is cooked through and tender, and the sauce has thickened slightly.

Remove the pan from the heat. Stir in the remaining 2 tablespoons of cold unsalted butter, piece by piece, until melted and incorporated. This adds richness and a glossy finish to the sauce.

Garnish with fresh chopped cilantro and serve hot with cooked basmati rice and warm naan bread.
