In a medium bowl, crack 2 large eggs per serving (total of 8 eggs for 4 servings). Add 1/4 cup of milk and whisk until the egg and milk mixture is well combined.

Heat 1/2 tablespoon of butter or cooking oil in a non-stick pan over medium heat. Pour the egg mixture into the pan and scramble, stirring occasionally, until desired consistency is reached. Transfer the scrambled eggs to a bowl and set aside.

In the same pan (or a separate one), cook the bacon slices over medium heat until crispy. Drain excess fat and set aside on a paper towel-lined plate.

Fill a shallow dish or pie plate with warm water. Dip one rice paper sheet into the water until it softens, about 15-20 seconds. Carefully lay it flat on a clean, dry surface or cutting board.

Repeat step 4 with a second rice paper sheet and place it directly on top of the first softened sheet. Then, repeat with a third rice paper sheet, creating a stack of three softened rice paper sheets.

Place one slice of cheddar cheese in the center of the stacked rice paper sheets. Top the cheese with a portion of the scrambled egg (about 1/4 of the total). Place one cooked bacon slice on top of the scrambled egg.

Carefully fold the edges of the stacked rice paper sheets towards the center, enclosing the fillings, to form a round, bagel-like shape. Gently press to seal the edges.

Heat the remaining 1/2 tablespoon of butter or cooking oil in a non-stick pan over medium heat. Place the formed rice paper bagel into the pan. Cook for 3-5 minutes per side, or until golden brown and crispy. Alternatively, you can air fry at 375°F (190°C) for 8-10 minutes, flipping halfway through.

Repeat steps 4-8 for the remaining ingredients to make three more breakfast bagels. Serve immediately, optionally cut in half.
