Heat the olive oil in a large pot or Dutch oven over medium heat.

Add the chopped onion, carrots, and celery to the pot. Sauté for 5-7 minutes, or until the vegetables begin to soften.

Stir in the minced garlic and cook for another 1 minute until fragrant.

Add the rinsed lentils, vegetable broth, diced tomatoes (undrained), bay leaf, dried thyme, salt, and black pepper to the pot. Stir well to combine.

Bring the stew to a boil, then reduce the heat to low, cover, and simmer for 30-35 minutes, or until the lentils are tender.

Remove the bay leaf. Stir in the fresh spinach and cook for 2-3 minutes, or until the spinach has wilted.

Taste and adjust seasoning as needed. Ladle the stew into bowls and garnish with fresh chopped parsley before serving.
