Pat the chuck roast dry with paper towels. Season generously on all sides with kosher salt and freshly ground black pepper.

Heat olive oil in a large skillet or Dutch oven over medium-high heat. Sear the chuck roast on all sides until deeply browned, about 3-4 minutes per side. This step is crucial for developing flavor.
