If making Kreung paste from scratch: Combine lemongrass, garlic, shallots, and fresh turmeric in a food processor. Blend until a coarse paste forms, adding 1-2 tablespoons of water as needed to help it blend.

In a large mixing bowl, combine the Kreung paste, brown sugar, and fish sauce. Mix well until the brown sugar is dissolved and all ingredients are thoroughly combined.

Add the chicken thighs to the bowl with the marinade. Using gloved hands, thoroughly mix and coat each chicken thigh with the Kreung marinade, ensuring every piece is well covered.
