Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.

In a large mixing bowl, combine the 12 tablespoons of room temperature unsalted butter, 1 cup of granulated sugar, and 1/4 cup of light brown sugar. Cream these ingredients together using an electric mixer until the mixture is light and fluffy.

Add the 1 large egg plus 1 egg yolk (both at room temperature), 2 teaspoons of vanilla extract, and 1/4 teaspoon of almond extract to the creamed butter mixture. Mix until all ingredients are well combined.

Fold in the 1/3 cup of white chocolate chips (if using) and 1/2 cup of sprinkles into the dough.

Roll the cookie dough into individual balls. Place them on the prepared baking sheets, leaving some space between each cookie. Gently press each cookie dough ball down with the bottom of a glass to flatten it. This helps the cookies spread evenly and prevents them from becoming too puffy during baking.

Bake for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underdone. Do not overbake. Let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

While the cookies are cooling, prepare the cream cheese frosting. In a bowl, beat the 2 ounces (57 g) of softened cream cheese and 1/4 cup (57g) of softened unsalted butter until the mixture is smooth and creamy.

Gradually add the 1 cup of powdered sugar and continue mixing until the frosting becomes fluffy.

Mix in the 1 teaspoon of vanilla extract and a pinch of salt. If the frosting is too thick, add 1-2 teaspoons of milk until the desired consistency is reached.

Once the cookies are fully cooled, spread or pipe the prepared cream cheese frosting onto them. Optionally, sprinkle extra sprinkles on top for decoration.
