To prepare the cranberry jam, combine the 1/2 cup of cranberries and 1/3 cup of water in a small saucepan. Heat over medium heat, stirring often. Add additional water, 1 tablespoon at a time, as needed, until the cranberries break down and the mixture reaches a jam-like consistency.

Once the cranberry mixture has reached a jam-like consistency, remove it from the heat and stir in 2 to 3 teaspoons of honey, or to your preferred sweetness. Set the cranberry jam aside.

Zest 1/2 of an orange and set the orange zest aside for later use.

In a separate medium saucepan, combine the 1 cup of oats, 2 cups of milk, sweetener to taste, 1/2 teaspoon of cinnamon, and 1 teaspoon of vanilla extract. Heat the mixture over medium heat, stirring occasionally, until the oatmeal reaches your desired consistency. This typically takes about 6 to 7 minutes.

Remove the oatmeal from the heat and let it cool for 5 minutes. During this time, the oatmeal will continue to thicken.

Stir the reserved orange zest into the cooled oatmeal.

To assemble, spoon a layer of cooked oatmeal into a serving dish. Top with a layer of the cranberry jam, then add another layer of oatmeal. Finish with an additional dollop of cranberry jam on top.

If desired, add a swirl of cream on top before serving. Enjoy!
