Preheat your oven to 375°F (190°C). Line a large baking sheet with parchment paper or a silicone baking mat.

Stack the Trader Joe's sweet potato tortillas and cut them into 6-8 wedges each, similar to how you would cut a pizza. You should have roughly 48-64 chips.

In a large bowl, combine the olive oil, chili powder, smoked paprika, garlic powder, and sea salt. Whisk until well combined.

Add the tortilla wedges to the bowl with the seasoning mixture. Toss gently with your hands or a spatula until all the chips are evenly coated. Ensure each chip gets some of that delicious spice blend!

Spread the seasoned tortilla wedges in a single layer on the prepared baking sheet. Make sure they are not overlapping too much to ensure even crisping. You may need to use two baking sheets.

Bake for 15-20 minutes, or until the chips are golden brown and crispy. Halfway through baking (around 8-10 minutes), flip the chips to ensure even browning and crispness on both sides.
