Finely chop the mushrooms, green chilies, onion, and fresh coriander. Place them in a medium-sized mixing bowl.

Crack the 2 eggs into the bowl with the chopped vegetables. Add salt and black pepper powder to taste.

Mix all the ingredients thoroughly until well combined. The mixture should be wet enough to coat the bread slices.

Heat a large non-stick pan over medium heat and add a small amount of oil, just enough to lightly coat the bottom.

Dip one bread slice into the prepared mushroom-egg mixture, ensuring both sides are fully coated. Place the coated bread slice directly into the heated pan.

Repeat with remaining bread slices, placing them in the pan without overcrowding. You may need to cook in batches. Immediately lay one cheese slice on top of each bread slice in the pan.

Pour any remaining mushroom-egg mixture evenly over the cheese slices and bread in the pan.

Cover the pan with a lid and cook for 2 to 3 minutes, or until the egg mixture is set, the cheese is melted, and the bottom of the bread is lightly golden brown.

Uncover the pan. Carefully transfer the mushroom bread to serving plates. Garnish with additional fresh coriander, if desired, and serve immediately.
