While the pasta cooks, pat the shrimp dry and season with 1 teaspoon of Cajun seasoning. In a large skillet or Dutch oven, heat 1 tablespoon of olive oil over medium-high heat. Add the sliced Andouille sausage and cook until browned and slightly crispy, about 5-7 minutes. Remove the sausage with a slotted spoon and set aside, leaving the rendered fat in the skillet.

Sprinkle the flour over the vegetables and stir constantly for 1 minute to create a roux.

Gradually whisk in the chicken broth, scraping up any browned bits from the bottom of the skillet. Bring to a simmer and cook for 2-3 minutes, until the sauce begins to thicken.

Stir in the heavy cream and bring the sauce back to a gentle simmer. Cook for 2-3 minutes, allowing it to thicken further. Remove from heat and stir in the 1/2 cup of grated Parmesan cheese until melted and smooth. Season with salt and black pepper to taste.
