In a medium bowl, combine the 1 1/2 pounds of chicken breast pieces with 1 tablespoon of olive oil. Add the Cajun seasoning, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Mix thoroughly until all chicken pieces are evenly coated.

Heat a large pan (skillet or braiser) over medium-high heat. Add the seasoned chicken to the hot pan in a single layer. Cook for 3 to 4 minutes per side, or until the chicken is blackened and cooked through. Once cooked, remove the chicken from the pan and set it aside.

To the same pan, add 1 tablespoon of butter. Add the diced yellow onion and sauté until softened, which takes approximately 3 to 4 minutes. Next, add the minced garlic and sauté for about 1 minute until fragrant.

Pour in 1/2 cup of chicken broth to deglaze the pan, making sure to scrape up any browned bits from the bottom of the pan. Stir in the 14 1/2 ounces of undrained diced tomatoes.

Bring the mixture to a simmer, then reduce the heat to medium-low. Stir in 1/2 cup of heavy cream and 1/2 cup of grated Parmesan cheese. Allow the sauce to simmer for about 5 minutes to thicken slightly.

Add the 19 ounces of cheese tortellini and the previously cooked blackened chicken back into the pan with the sauce. Stir everything together until well combined.

Continue to cook for an additional 3 to 5 minutes, or until the tortellini is tender and thoroughly heated through.

Garnish with fresh chopped parsley before serving.
