Prepare the nori powder: In a food processor or blender, combine the roasted seaweed snacks and roasted white sesame seeds. Blend until a fine powder is formed. This should take about 30 seconds to 1 minute.

Make the nori sauce base: Transfer the nori powder to a medium-sized bowl. Add the sesame oil, 2 tablespoons of soy sauce, granulated sugar, grated Parmesan cheese, grated garlic, and the egg yolk. Mix all ingredients thoroughly with a spoon or spatula until well combined and a thick paste forms. Set aside.

Cook the chili prawn crumble: Heat olive oil and chili crisp in a large skillet or frying pan over medium-high heat. Once shimmering, add the roughly chopped prawns. Cook for 3-5 minutes, stirring occasionally, until the prawns are pink and cooked through. Season with salt. Remove the pan from heat and set aside.

Cook the pasta: Bring a large pot of salted water to a rolling boil. Add the pasta noodles and a splash (about 1 tablespoon) of soy sauce to the boiling water. Cook according to package directions until al dente.

Combine pasta with sauce: Before draining the pasta, reserve about 1 cup of the starchy pasta water. Using tongs, transfer the cooked pasta directly from the pot into the bowl with the nori sauce mixture. Add about 1/2 cup of the reserved pasta water to the bowl.

Finish the sauce: Stir the pasta and nori mixture vigorously and thoroughly. The heat from the pasta and pasta water will cook the egg yolk, creating a glossy, emulsified, and umami-rich sauce that coats the pasta. If the sauce seems too thick, add more reserved pasta water, 1 tablespoon at a time, until it reaches your desired consistency.

Serve: Divide the nori pasta among serving bowls. Top each serving generously with the chili prawn crumble. Serve immediately.
