Preheat your broiler to high (500°F / 260°C).

In a large bowl, combine the thin-cut beef, 1 tablespoon avocado oil, pomegranate molasses, cumin, paprika, coriander, garlic powder, onion powder, cinnamon, allspice, turmeric, black pepper, cayenne, cloves, and salt. Toss everything together until every piece of beef is fully coated.

Spread the seasoned beef in a single layer on a baking sheet. Broil on high for 4-5 minutes, then flip the beef and continue to broil for another 4-5 minutes, or until crispy and charred. This will take about 8-10 minutes total.

While the beef is broiling, prepare the salad. Finely chop the curly parsley, red onion, and tomato. Place them in a medium bowl.

Add the juice of 1/2 lemon, a drizzle of avocado oil, and 2 1/2 tablespoons of sumac to the chopped vegetables. Mix everything together and let it sit for at least 10 minutes to allow the flavors to meld.

In a small bowl, mix together the tomato paste and 1 tablespoon of water for the wrap coating.

Air fry your fries until golden and crispy, according to package directions. This can be done while the beef is cooking or after.

To assemble the wraps, grab a piece of pita bread and spread a generous amount of tahini or toum on it.

Load the pita with a portion of the cooked beef, a spoonful of the sumac salad, and some air-fried fries. Roll it into a wrap.

Lightly coat the outside of the rolled wrap with the tomato paste mixture. Toast the wrap in a dry pan or under the broiler for 1-2 minutes per side until crispy.

Serve immediately and enjoy your crispy beef shawarma wraps!
