Cut 300g of beef into thin slices.

In a bowl, combine the beef slices with 1/2 teaspoon salt, 1/2 teaspoon sugar, 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1/2 teaspoon baking soda, 1 tablespoon cornstarch, 2 tablespoons water, and 1 tablespoon oil. Mix thoroughly by hand until all ingredients are well incorporated and the beef is coated.

Cut 2 tomatoes into wedges.

Mince 3 cloves of garlic.

Chop 1 stalk of scallion, reserving some for garnish if desired.

Heat 1 tablespoon of oil in a wok over high heat. Add the marinated beef and stir-fry until it is browned, about 2-3 minutes.

Once browned, remove the cooked beef from the wok and set it aside.

Add the minced garlic and chopped scallion (the portion for cooking) to the same wok. Stir-fry until fragrant, about 30 seconds to 1 minute.

Add the tomato wedges to the wok and stir-fry until they begin to soften, about 2-3 minutes.

Pour in 1/2 cup of water. Add 1/2 teaspoon salt, 1/2 teaspoon sugar, 1 tablespoon soy sauce, and 1 tablespoon oyster sauce. Stir well to combine.

Cook the mixture for 2 minutes to allow the flavors to meld and the sauce to develop.

Return the cooked beef to the wok. Stir-fry everything together until the sauce thickens and coats the beef and tomatoes, about 2 minutes.

Garnish the dish with the reserved fresh chopped scallion before serving. Serve hot, preferably with rice.
