Preheat your oven to 400°F. Lightly grease a 9x13 inch baking dish with a small amount of olive oil or line it with parchment paper for easy cleanup.
Pat the cod fillets dry with paper towels. This helps them cook more evenly and prevents steaming.
In a small bowl, whisk together the 2 tablespoons of olive oil, minced garlic, 1/2 teaspoon of sea salt, 1/4 teaspoon of black pepper, and 1/4 teaspoon of cayenne pepper.
Place the dried cod fillets in the prepared baking dish. Brush the olive oil mixture evenly over both sides of each cod fillet.
Arrange the lemon slices over and around the cod fillets. Sprinkle the finely chopped fresh dill generously over the fish and lemon slices. Squeeze the juice from the remaining half of the lemon over the entire dish.
Bake in the preheated oven for 12 to 15 minutes, or until the cod is opaque and flakes easily with a fork. Cooking time may vary slightly depending on the thickness of your fillets.
Carefully remove the baking dish from the oven. Serve the baked cod immediately, garnished with extra fresh dill if desired.
