Combine the cubed seedless watermelon, roughly chopped cucumber, fresh lime juice, packed fresh mint leaves, and granulated sugar (if using) in a high-speed blender.

Blend the mixture until it is completely smooth and no large chunks remain. This may take 1-2 minutes depending on your blender.

Place a fine-mesh sieve over a large pitcher or bowl. Pour the blended mixture through the sieve, using the back of a spoon or a spatula to press down on the solids to extract as much liquid as possible. Discard the remaining pulp.

Stir in the cold water (or sparkling water) into the strained liquid. Taste and adjust sweetness or tartness if desired, adding more sugar or lime juice as needed.

Cover the pitcher and chill the watermelon cucumber cooler in the refrigerator for at least 30 minutes, or until thoroughly cold. This enhances the flavors.
