Heat 1 tablespoon of oil and 1 tablespoon of butter in a pan over medium heat.

Add 1 teaspoon of cumin seeds to the hot oil and butter and let them splutter.

Add 1 tablespoon of ginger-garlic paste and sauté for a few seconds until fragrant.

Add 1 finely chopped medium onion and cook until it turns golden brown, stirring occasionally.

Stir in 1 cup of tomato puree, 1/2 finely chopped capsicum, and 2 finely chopped green chilies. Mix well to combine.

Add salt to taste, 1/2 teaspoon of turmeric powder, 1 teaspoon of red chili powder, 1 teaspoon of coriander powder, and 1/2 teaspoon of garam masala. Mix all the spices thoroughly with the vegetable mixture.

Continue to cook the mixture, stirring occasionally, until the oil starts to separate from the masala, indicating it's well cooked.

Add 1/2 cup of water, cover the pan, and cook for 5 minutes to allow the flavors to meld.

Remove the lid and add 150-200 grams of grated paneer and 1 grated processed cheese cube. Mix everything well until the cheese begins to melt and combine.

Stir in chopped fresh coriander leaves and 1 teaspoon of lemon juice. Mix gently.

Finally, add 1 teaspoon of pav bhaji masala and give it a good mix to incorporate the flavors.

Serve the hot veg cheese paneer ghotala immediately, garnished with additional grated cheese and fresh coriander leaves. Toast pav (bread rolls) with butter and serve alongside for dipping.
