Heat olive oil in a 10-inch ovenproof skillet over medium heat. Add chopped onion and red bell pepper, cooking until softened, about 5 minutes.
Add the fresh spinach to the skillet and cook until wilted, about 2 minutes.
Pour the egg mixture into the skillet. Sprinkle the shredded cheddar cheese evenly over the top.
