Get a cast iron skillet or a heavy-bottomed pan screaming hot on medium-high heat. Allow the pan to heat thoroughly until it begins to smoke slightly.

Place the 4 large Roma tomatoes, 1 quartered white onion, 2 jalapeños (stems removed), and 4 peeled garlic cloves directly into the hot pan. Arrange them in a single layer if possible.

After resting, carefully remove the plastic wrap/lid. Peel the skin off the tomatoes; it should come off easily. You can discard the skins.

Add all the roasted vegetables (tomatoes, onion, jalapeños, garlic), along with 1/2 cup of fresh, roughly chopped cilantro, the juice of 1 lime, 1 teaspoon of salt, and 1/2 teaspoon of ground cumin, to a blender.

Pulse the ingredients in the blender until the salsa reaches your desired consistency. For a restaurant-style salsa, it is recommended to keep it slightly chunky, not completely smooth. Avoid over-blending to maintain texture.

Taste the salsa and adjust the seasoning if needed. More salt or lime juice can be added to enhance the flavor. A pinch of sugar can be included to balance the acidity if desired.
