Preheat your oven to 350°F. Grease a donut pan with the 1 tablespoon of oil.

In a medium bowl, combine the pumpkin puree, unsweetened applesauce, egg, vanilla extract, maple syrup, and 1/4 cup milk. Whisk these wet ingredients together until well combined.

In a separate large bowl, add the all-purpose flour, baking soda, cinnamon, pumpkin pie spice, and salt. Whisk to combine these dry ingredients thoroughly.

Pour the wet ingredients into the dry ingredients. Mix until just combined, being careful not to overmix the batter.

Transfer the donut batter into a piping bag or a large ziploc bag with one corner snipped off. Pipe the batter evenly into the prepared donut molds, filling each about two-thirds full.

Bake the donuts for 10-12 minutes, or until a toothpick inserted into a donut comes out clean.

Let the donuts cool completely in the pan before carefully removing them. This will take approximately 15-20 minutes.

While the donuts are cooling, prepare the glaze. In a small bowl, combine the powdered sugar and 1 tablespoon of milk. Stir until smooth and free of lumps.

Once the donuts are completely cool, dip the top of each donut into the prepared glaze, ensuring it's fully coated. Immediately add sprinkles on top of the glaze before it sets.
