In a large jar or container, combine the oats, chia seeds, plant milk, 2 tablespoons of maple syrup, 1/2 cup of blackberries, vanilla extract, and a pinch of salt for the overnight oats.

Stir all the ingredients thoroughly until they are well combined and the blackberries are slightly crushed.

Cover the jar with a lid and refrigerate the mixture overnight, or for at least 8 hours, to allow the oats to soften and absorb the liquid.

In a separate bowl, add the coconut yogurt, 1/2 cup of blackberries, 1 tablespoon of maple syrup, and lemon juice for the blackberry yogurt swirl.

Using an immersion blender or a regular blender, blend the yogurt mixture until it is smooth and creamy. Set aside.

The next morning, remove the chilled overnight oats from the refrigerator.

Pour the prepared blackberry yogurt swirl over the top of the overnight oats in the jar.

Gently swirl the yogurt into the oats using a spoon or knife to create a beautiful marbled effect.

Garnish with a few fresh blackberries before serving.
