Preheat your oven to 325°F (160°C).

Place the 3-4 pound chuck or blade roast into a large oven-safe pot or Dutch oven.

Add the grated apple, gochujang, diced onion, minced garlic, and minced ginger to the pot with the beef.

Pour in the honey, apple cider vinegar, beef broth, and low sodium soy sauce. If using, add the chopped kimchi to the pot.

Stir gently to combine the liquids and seasonings around the roast. Ensure the roast is mostly submerged in the liquid.

Cover the pot tightly with a lid and place it in the preheated oven. Braise for 4 hours, or until the beef is fork-tender.

Once cooked, carefully remove the pot from the oven. Using two forks, shred the tender beef directly in the pot, allowing it to absorb the flavorful braising liquid.

Serve the shredded Gochujang Braised Beef in your preferred way, such as in lettuce wraps with rice, kimchi, green onions, and sesame seeds, or in bowls or burritos.
