Preheat your oven to 350°F. Lightly grease a 12-cup muffin tin with cooking spray.

Separate the biscuit dough. For each muffin cup, gently press one biscuit into the bottom and up the sides, forming a cup. If using larger biscuits, you may need to flatten them slightly before pressing.

Distribute the cooked and crumbled bacon evenly among the biscuit cups.

Place one slice of cheddar cheese into each biscuit cup, over the bacon.

In a small bowl, whisk the large eggs until the yolks and whites are fully combined. Carefully pour the whisked egg mixture evenly into each biscuit cup, filling them about three-quarters full.

Top each biscuit bite with a sprinkle of shredded cheddar cheese. If you have any extra crumbled bacon, you can add a little more on top now.

Bake for 16 to 18 minutes, or until the biscuits are golden brown and the eggs are fully set and puffed up. An inserted knife should come out clean.

Remove the muffin tin from the oven and let the biscuit bites cool in the tin for 2 minutes before carefully removing them. Serve warm and enjoy!
