Heat 1 tablespoon of olive oil in a large skillet or Dutch oven over medium-high heat. Add the crumbled Trader Joe's Sweet Italian Chicken Sausage and cook, breaking it up with a spoon, until browned and cooked through, about 5-7 minutes. Remove the sausage from the skillet and set aside, leaving any rendered fat in the pan.

Add the remaining 1 tablespoon of olive oil to the same skillet. Add the Trader Joe's Cauliflower Gnocchi directly from the package (no need to thaw). Cook, stirring occasionally, until the gnocchi is lightly browned and tender, about 8-10 minutes. If the gnocchi sticks, add a splash of water or broth.

Stir in the halved cherry tomatoes and cook for 2-3 minutes until they start to soften slightly. Add the fresh spinach and cook until wilted, about 1-2 minutes.

Return the cooked sausage to the skillet. Stir in the Trader Joe's Vegan Kale, Cashew & Basil Pesto and red pepper flakes (if using). Toss everything together until well combined and heated through.

Serve immediately, garnished with grated Parmesan cheese.
