Heat the vegetable oil in a medium-sized pot or Dutch oven over medium heat.

Add the unwashed jasmine rice to the hot oil. Fry the rice, stirring continuously, until it achieves a light brown color, which should take approximately 5 minutes.

While the rice is frying, combine the roughly chopped fresh cilantro, peeled garlic cloves, roughly chopped yellow onion, chicken bouillon, lime juice, and water in a blender.

Blend the mixture until it is completely smooth and a vibrant green color.

Once the rice is lightly browned, carefully pour the blended green mixture into the pot with the fried rice. Stir well to combine all ingredients.

Bring the mixture to a boil, then reduce the heat to low, cover the pot tightly with a lid, and let it simmer for 20 minutes.

After 20 minutes, remove the pot from the heat, but keep it covered. Let the rice sit undisturbed for an additional 5 minutes to steam and finish cooking.

Uncover the pot and gently fluff the cooked cilantro rice with a fork before serving. Adjust seasoning to your liking.
