Place several fresh cranberries into each compartment of a silicone ice cube tray. You will need enough compartments for 4 servings, likely 4-8 cubes depending on size.

Add a small sprig of fresh rosemary to each compartment alongside the cranberries.

Pour apple juice over the cranberries and rosemary, filling each ice cube mold completely.

Freeze these molds until the ice cubes are solid. This will take at least 4 hours, or preferably overnight.

Take a decorative cocktail glass. Using tongs, carefully place one or two of the prepared cranberry, rosemary, and apple juice ice cubes into each glass.

Pour 2 fluid ounces of vodka and 2 fluid ounces of pink lemonade over the ice cubes in each glass.

Top off each drink with 3 fluid ounces of champagne.

Garnish each finished mimosa with additional fresh cranberries and a small sprig of rosemary for an extra festive touch.
