Place the catfish fillets into a glass dish. Squeeze mustard over the fish, crack the egg into the dish, and drizzle hot sauce over the fish. Add your desired seasonings.

Mix all ingredients thoroughly with the catfish fillets until they are well coated and the mixture has a uniform yellow-orange color.

To assemble each sandwich: Spread a generous amount of tartar sauce on the toasted bottom bun. Place one fried fish fillet (with melted cheese) on top of the tartar sauce. Place a second fried fish fillet on top of the first. Spread a generous amount of tartar sauce on the toasted top bun. Place the top bun on the assembled sandwich.
