In a medium bowl, combine the chicken mince, 2 tablespoons of red curry paste, 1 tablespoon of soy sauce, 1 tablespoon of honey, the juice from 1/2 lime, 1/2 tablespoon of grated ginger, 1 grated garlic clove, and 2 tablespoons of finely chopped chives. Mix until all ingredients are thoroughly combined.

Fill a shallow bowl with warm water. Take one rice paper wrapper and dip it into the water for a few seconds until it becomes soft and pliable.

Spoon a log of the chicken mixture (approximately 1 1/2 to 2 tablespoons) along the bottom third of the softened rice paper wrapper. Fold in the sides of the wrapper, then roll it tightly from the bottom up into a sausage shape.

Using kitchen scissors, carefully snip the rolled chicken and rice paper into bite-sized pieces, about 1-inch long.

Air fry at 200°C (390°F) for 12–15 minutes, flipping the pieces halfway through the cooking time, until the chicken is cooked through and the rice paper is golden brown and crispy.

While the chicken bites are cooking, prepare the dipping sauce. In a small bowl, whisk together the 1/3 cup of Kewpie mayonnaise, 1 tablespoon of red curry paste, 1 tablespoon of lime juice, 1 teaspoon of honey, 1 teaspoon of soy sauce, and 1 teaspoon of rice wine vinegar until the sauce is smooth and well combined.

Once cooked, transfer the crispy chicken bites to a serving platter. Top with chopped coriander and a drizzle of chilli crisp. Serve immediately with the prepared dipping sauce on the side.
