In a measuring cup or small bowl, combine the warm water, granulated sugar, and active dry yeast. Stir gently to combine and let it sit for 10 minutes until a thin layer of foam appears on top, indicating the yeast is active.

In a large mixing bowl (preferably a stand mixer bowl), add the all-purpose flour and salt. Pour the activated yeast mixture into the flour and salt.

If using a stand mixer, attach the dough hook and knead the mixture for about 10 minutes until a cohesive dough forms. Alternatively, knead by hand on a lightly floured surface for 10-12 minutes until the dough is smooth and elastic.

Lightly grease a large clean bowl with olive oil, spreading it evenly. Place the dough ball into the greased bowl, turning once to coat. Cover the bowl with plastic wrap or a clean kitchen towel and let it rest in a warm place for 1 hour, or until it has doubled in size.

Once risen, gently punch the air out of the dough and dump it onto a clean, lightly floured surface. Reshape the dough into a ball. Using a knife or dough cutter, divide the dough into 8 equal parts. Shape each part into a smooth ball. Then, poke a hole through the center of each ball with your thumb and gently stretch and shape it into a bagel. Place the shaped bagels onto individual pieces of parchment paper.

Cover the shaped bagels loosely with plastic wrap or a clean kitchen towel and let them rest for another 30 minutes for a second rise.

While the bagels are rising for the second time, bring a large pot of water to a rolling boil. Carefully place 2-3 rested bagels into the boiling water (do not overcrowd the pot). Boil them for 1 minute, then flip them over with a slotted spoon and boil for another 30 seconds. Remove the boiled bagels from the water.

Place the boiled bagels directly onto a baking sheet lined with fresh parchment paper. Brush each bagel with the beaten egg wash. At this stage, add your desired toppings such as shredded cheddar cheese, sliced jalapeños, or everything bagel seasoning.

Preheat your oven to 400°F. Bake the bagels for 25 minutes, or until they are golden brown and cooked through. Let cool slightly before serving.
