In a large bowl, combine the warm water, instant yeast, granulated sugar, fine sea salt, olive oil, and 1 cup of the all-purpose flour. Mix until well combined.

Gradually add the remaining all-purpose flour, a little at a time, mixing until the dough comes together and is still slightly sticky.

Lightly flour your hands and knead the dough directly in the bowl for about 1 minute, until it becomes smooth and very soft, but not overly sticky.
Lightly grease a clean bowl with olive oil. Place the dough in the greased bowl, cover it with plastic wrap or a clean kitchen towel, and let it rest in a warm place for 40 minutes, or until doubled in size.

Once rested, gently punch down the dough and divide it into 8 equal pieces.

On a lightly floured surface, roll each dough piece into a very thin circle, approximately 6-7 inches in diameter.

Heat a griddle or large skillet over medium-high heat. Lightly grease the pan with a small amount of olive oil.

Place one rolled pita flat in the hot pan. Cook for about 2 minutes, or until the bottom is lightly golden and bubbles begin to form on the surface.

Flip the pita and cook for another 1 minute or so, until puffed and lightly golden on the second side.

Remove the cooked pita from the pan and immediately place it inside a clean kitchen towel to keep it warm and soft while you cook the remaining pitas.

Repeat steps 8-10 with the remaining dough pieces.
