Place the cut boneless chicken thigh pieces in a bowl.

Add salt, white pepper, and five spice powder to the chicken. Mix well by hand to ensure the chicken is evenly coated. Let the chicken marinate for 10 minutes.

Heat cooking oil in a wok. Add the marinated chicken pieces to the hot wok. Stir-fry the chicken until it turns golden brown.

To the wok with the chicken, add dried chili peppers, star anise, ginger, and garlic. Stir-fry until the aromatics become fragrant.

Add sugar, soy sauce, dark soy sauce, oyster sauce, and Shaoxing wine to the wok. Stir-fry for 1 minute to combine the flavors.

Pour water into the wok. Cover the wok with a lid and braise the chicken on medium heat.

Remove the lid from the wok. Continue to cook, stirring occasionally, until the sauce thickens to your desired consistency.

Garnish the braised chicken with fresh scallions and a sprinkle of sesame seeds. Serve immediately.
