Heat the butter in a large pan over medium-high heat. Add the peeled and deveined shrimp to the pan. Season the shrimp with salt, paprika, and black pepper to taste. Sear the shrimp for 1 to 2 minutes per side, until they are just pink and cooked through. Remove the cooked shrimp from the pan and set them aside on a plate.

In the same pan, add the diced onion and minced garlic. Sauté for 2 to 3 minutes, or until the onion is softened and translucent and the garlic is fragrant. Be careful not to burn the garlic.

Pour in the half & half and add the halved cherry tomatoes to the pan. Reduce the heat to low. Stir in the grated Parmesan cheese until it melts and the sauce becomes silky and smooth.

If using, add the large handful of baby spinach to the pan and stir until it wilts into the sauce. Return the seared shrimp to the pan and toss gently to coat them with the creamy garlic sauce and heat through for about 1 minute.

Serve the creamy garlic shrimp immediately over your choice of pasta, rice, or with crusty bread.
