Preheat your oven to 160°C (fan forced). Grease and line a 20cm x 10cm loaf tin.

In a large bowl, cream together the 180g softened unsalted butter and 160g caster sugar until the mixture is light and fluffy.

Add 2 large eggs, one at a time, mixing well after each addition until fully incorporated. Stir in 1 teaspoon vanilla extract.

In a separate medium-sized bowl, whisk together the 230g plain flour, 2 teaspoons baking powder, 1/2 teaspoon bicarbonate of soda, and 1/4 teaspoon salt until thoroughly combined.

In another bowl, combine the 180g full fat natural yoghurt, 100ml milk, the zest of 1 lemon, and the pulp of 2 passionfruit. Mix well.

Gradually add the dry ingredients to the wet ingredients, alternating with the yoghurt mixture. Start and end with the dry ingredients. Add approximately one-third of the dry mixture, mix until just combined, then add half of the wet mixture and mix. Repeat with another third of the dry mixture, the remaining wet mixture, and finally the last third of the dry mixture, mixing gently after each addition until just combined and no streaks of flour remain. Be careful not to overmix.

Pour the prepared batter evenly into the greased and lined 20cm x 10cm loaf tin. Bake in the preheated oven for 50-60 minutes, or until a skewer inserted into the center of the loaf comes out clean.

While the loaf cools slightly in its tin, prepare the glaze. In a small bowl, combine 1 cup icing sugar and 2-3 tablespoons of passionfruit pulp (from approximately 2-3 passionfruit). Whisk until the mixture is smooth and has a pourable consistency.

Once the loaf has cooled slightly, carefully remove it from the tin and transfer it to a wire rack. Pour the prepared passionfruit glaze generously over the top of the warm loaf. Allow the glaze to set completely before slicing and serving.
