Preheat your oven to 400°F (200°C).

Cut the 2.5 lb chicken breast into uniform cubes. Place the cubed chicken in a large bowl.

Add the seasonings to the chicken: 2 teaspoons garlic powder, 2 teaspoons onion powder, 1 1/2 tablespoons smoked paprika, 2 teaspoons oregano, 1 teaspoon chili powder, 1 teaspoon cumin, 1 teaspoon salt, and 1/2 teaspoon pepper. Mix thoroughly until the chicken is evenly coated.

Spread the seasoned chicken cubes evenly on a baking sheet. Bake in the preheated oven for approximately 15 minutes, or until cooked through and lightly browned.

While the chicken bakes, prepare the street corn mix. Drain the 2 cans of corn and add the kernels to a large bowl.

Finely dice 1/2 a medium red onion and 2 large jalapeños. Add them to the bowl with the corn.

Add 300g of non fat plain Greek yogurt and 120g of light mayo to the bowl. Squeeze the juice from 4 limes into the mixture. Add 2 teaspoons chili powder and salt to taste.

Chop fresh cilantro to your desired amount and add it to the bowl. Crumble 100g of cotija cheese into the bowl.

Mix all the street corn ingredients thoroughly until they are well combined.

Cook 1 1/2 cups of dry Jasmine rice according to the package instructions.

Once all components are cooked and prepared, portion out a serving of the cooked Jasmine rice into each of 6 meal prep containers. Add a serving of the baked seasoned chicken next to the rice in each container. Place a generous serving of the prepared street corn mix into each container, alongside the chicken and rice.

Optionally, sprinkle Tajin seasoning over the street corn to taste before serving or storing.
