Bring 6 cups of water to a rolling boil in a large pot over high heat.

Add the instant ramen noodles (discarding the sauce packets for now) to the boiling water. Cook for 2-3 minutes, or until the noodles are al dente. Do not overcook.

Carefully drain the noodles, reserving 1/4 cup of the starchy noodle cooking water. Transfer the drained noodles to a large, wide skillet or wok over medium heat.

Open the spicy sauce packets from the ramen and add them directly to the noodles in the skillet, along with the reserved 1/4 cup of noodle water. Stir vigorously to ensure the noodles are evenly coated with the spicy sauce.

Add the shredded mozzarella cheese and shredded cheddar cheese to the noodles. Continue to stir and toss the noodles constantly until all the cheese is fully melted and creates a thick, gooey, and stretchy sauce that coats every strand of ramen.

Stir in about half of the thinly sliced green onions into the cheesy ramen. Cook for another minute, allowing the flavors to meld.

Divide the creamy spicy cheesy ramen among four serving bowls. Garnish each bowl with the remaining sliced green onions.
