Place the chopped Andes Mints into a large, microwave-safe bowl.

Microwave the Andes Mints in short intervals, starting with 30-60 seconds. After each interval, remove the bowl from the microwave and stir the chocolate mixture thoroughly. Continue microwaving and stirring in short bursts until the chocolate is fully melted and smooth. Be careful not to burn the chocolate.

Once the chocolate is completely melted and has a smooth, creamy consistency, use a fork to dip individual Ritz crackers into the mixture. Ensure each cracker is fully submerged and coated in the melted chocolate.

Lift the chocolate-coated cracker out with the fork, allowing any excess chocolate to drip back into the bowl.

Carefully place the chocolate-covered crackers onto a baking sheet lined with parchment paper or a silicone baking mat. Repeat the dipping process for all desired crackers.

Once all crackers are coated, place the baking sheets into the refrigerator or freezer to allow the chocolate to set and harden completely. This will take approximately 30 minutes in the refrigerator or 15 minutes in the freezer.
