Add the uncooked rice to a rice cooker pot. Pour in the chicken broth, then add 1 tablespoon of sesame oil, 1 teaspoon of salt, and 1 1/2 teaspoons of sugar. Stir gently to combine.

Carefully place the whole Costco rotisserie chicken directly on top of the rice mixture in the rice cooker. Close the rice cooker and cook for 20 minutes, or until the rice is fully cooked and the cooker indicates it's finished.

While the chicken and rice are cooking, prepare the scallion ginger sauce. In a heat-proof bowl, combine the 1/2 cup of chopped green onions, 1 tablespoon of minced ginger, and 1 tablespoon of minced garlic.

In a separate small pan, heat 1/4 cup of oil over medium-high heat until it is smoking hot. Carefully pour the smoking hot oil over the green onions, ginger, and garlic in the bowl. It will sizzle audibly.

To the hot oil mixture, add 1 tablespoon of soy sauce, 1 tablespoon of vinegar, 1 tablespoon of sugar, 1 tablespoon of sesame oil, and 1 teaspoon of chili oil. Stir all the ingredients together thoroughly until well combined.

Once the rice cooker has finished its cycle, carefully remove the whole rotisserie chicken from the pot. Fluff the cooked rice with a fork.

Shred the cooked chicken into bite-sized pieces. Serve the fluffy scallion-infused rice alongside the shredded chicken, drizzled generously with the prepared scallion ginger sauce. Enjoy!
