Heat the oil in a large pan or skillet over medium-high heat.

Carefully place the marinated chicken pieces into the hot oil. Fry the chicken for 5-7 minutes per side, or until it is golden brown and crispy.

Remove the crispy chicken from the pan and set it aside on a plate. Keep any remaining oil in the pan.

Add the diced red onions to the same pan. Sauté for 3-4 minutes until softened.

Stir in the tomato paste, Gochujang, and minced garlic. Cook for another 1-2 minutes, stirring constantly, until fragrant.

Pour in the entire tin of coconut milk. Stir the sauce well to combine all ingredients, scraping up any browned bits from the bottom of the pan.

Add the lime leaves to the sauce.

Return the crispy chicken pieces to the pan with the sauce. Reduce the heat to medium-low, cover, and let the chicken simmer in the sauce for 15 minutes, allowing the flavors to meld and the chicken to become tender.

While the chicken simmers, prepare your rice and steam the broccoli according to package instructions.

Serve the juicy chicken and sauce over the cooked rice, alongside the steamed broccoli.

Garnish each serving with fresh chopped cilantro and a generous squeeze of fresh lime juice.
