Preheat your oven to 375°F. Lightly grease an 8x8 inch baking dish or a similar sized gratin dish.

Bring a large pot of salted water to a boil. Add the Trader Joe's fresh cauliflower florets and cook for 5-7 minutes, or until tender-crisp. Drain well and set aside.

While the cauliflower cooks, prepare the cheese sauce. In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Gradually whisk in the whole milk until smooth. Bring the mixture to a gentle simmer, stirring frequently, until the sauce thickens, about 3-5 minutes.

Remove the saucepan from the heat. Stir in the shredded Trader Joe's Unexpected Cheddar Cheese until completely melted and smooth. Add the Dijon mustard, garlic powder, ground nutmeg, salt, and freshly ground black pepper. Taste and adjust seasonings as needed.

Arrange the drained cauliflower florets evenly in the prepared baking dish. Pour the cheese sauce over the cauliflower, ensuring it's well coated.

Sprinkle the Trader Joe's Panko Breadcrumbs evenly over the top of the gratin.

Bake for 20-25 minutes, or until the gratin is bubbly and the breadcrumbs are golden brown. If the top is browning too quickly, you can loosely tent it with foil.

Remove from the oven and let rest for 5 minutes before serving. Garnish with fresh chopped parsley, if desired.
