Prepare the cabbage: Place the cut-side down on your cutting board, then slice it as thinly as possible into long strips. Discard the core. Set the sliced cabbage aside.

Sauté the cabbage: Heat a large sauté pan or similar heavy-bottomed pot over high heat. Add 1 to 2 tablespoons of oil and let it heat until it reaches its smoking point. Add the sliced cabbage to the hot pan, season with salt and black pepper to taste. Sauté for 10 minutes, making sure not to stir constantly. Allow the cabbage to remain undisturbed for a minute or two at a time to develop brown, caramelized pieces. Remove the sautéed cabbage from the heat and transfer it to a plate.

Brown the ground chicken: Heat a large skillet on medium-high heat and add 1 tablespoon of oil. Let it heat for a couple of minutes. Add the ground chicken (or turkey) to the skillet and break it up into small pieces with a spoon or spatula. Cook until browned.

Sauté aromatics: Add the diced onion and minced garlic to the skillet with the cooked chicken. Cook for 3 to 5 minutes, or until the onion has softened.

Simmer the sauce: Add the soy sauce, hoisin sauce, maple syrup (or honey), 1/2 cup of water (or chicken broth), and toasted sesame oil to the skillet. Bring the mixture to a simmer.

Thicken the sauce: In a small bowl, whisk together 1 1/2 tablespoons of cornstarch with 1 1/2 tablespoons of water to create a slurry. While stirring the simmering sauce, slowly pour in the cornstarch mixture. Continue to cook, stirring occasionally, until the sauce has thickened, about 3 to 5 minutes.

Serve: Serve the sesame ground chicken mixture directly over the sautéed cabbage noodles.
