Preheat oven to 400°F. Line a baking sheet with parchment paper.

Heat olive oil in a large skillet over medium heat. Add chopped onion and cook until softened, about 3-4 minutes. Add minced garlic and cook for another minute until fragrant.

Add ground beef to the skillet and cook, breaking it up with a spoon, until browned. Drain any excess fat.

Stir in the squeezed dry spinach, chopped sun-dried tomatoes, sliced Kalamata olives, dried oregano, ground cumin, salt, and black pepper. Cook for 2-3 minutes, allowing the flavors to meld.

Remove from heat and stir in the crumbled Trader Joe's Feta Cheese. Let the mixture cool slightly.

Unroll the thawed Trader Joe's Puff Pastry sheet onto a lightly floured surface. Cut the pastry into 4 equal squares.

Spoon an equal amount of the beef filling onto one half of each pastry square. Fold the other half of the pastry over the filling to create a triangle or rectangle. Crimp the edges with a fork to seal.

Transfer the turnovers to the prepared baking sheet. Brush the tops of the turnovers with the beaten egg.

Bake for 20-25 minutes, or until the pastry is golden brown and puffed.
