In a small glass bowl, combine the chopped fresh green herbs, minced garlic, and halved or quartered cherry tomatoes.

Zest the entire lemon directly into the bowl over the other ingredients. Then, squeeze the fresh lemon juice into the bowl.

Add the garlic chilli crisp to the bowl. Using a spoon, thoroughly mix all the ingredients until well combined, creating a vibrant fresh topping.

Place a pan on the stove over medium-high heat. Carefully open the cans of sardines and pour the reserved oil from the cans directly into the hot pan.

Once the oil is shimmering, carefully place the sardines from the cans into the pan. Pan-fry for 2-3 minutes, using tongs to gently flip them and break them apart slightly as they heat through and become lightly crisped.

To assemble, place a serving of cooked white rice onto each plate. Arrange the pan-fried sardines on top of the rice.
