Remove the parsley leaves from their stems and finely chop them. Finely dice the onion, mince the garlic, and chop the scallions.

Heat the 2 tablespoons of butter and 1 tablespoon of olive oil in a medium pot over medium heat.

Add the finely diced white onion and cook for 3 to 4 minutes, until softened and translucent.

Stir in the minced garlic and cook for about 30 seconds, until fragrant.

Add the rinsed Sella basmati rice and stir for 1 to 2 minutes until lightly toasted and coated in the butter mixture.

Stir in the chicken bouillon powder, salt, white pepper, and chili flakes until evenly combined with the rice.

Pour in the water and add the fresh thyme sprigs. Bring the mixture to a boil.

Once boiling, reduce the heat to low, cover the pot, and allow to cook for 20 minutes or until the rice is tender and all the water has been absorbed.

Remove the thyme sprigs. Stir in the chopped fresh parsley and chopped scallions. If desired, stir in 1 tablespoon of butter for extra richness. Mix well and serve immediately.
