Preheat your oven to 350°F. Line a baking sheet with parchment paper.

In a large mixing bowl, combine the mashed boiled potatoes, 2 eggs, Greek yogurt, baking powder, salt, garlic powder, onion powder, and pepper.

Mix all the ingredients thoroughly until they are well combined and form a cohesive dough-like mixture.

Using your hands, form the potato mixture into small, individual buns, about 2-3 inches in diameter. Place them onto the prepared baking sheet, leaving some space between each bun.

In a separate small bowl, whisk the remaining 1 egg yolk until smooth.

Brush the tops of the formed buns generously with the whisked egg yolk. This will give them a golden-brown finish and help the sesame seeds adhere.

Sprinkle sesame seeds generously over the egg-washed buns.
