Add the pitted dates, cashews and almonds, pumpkin seeds, melon seeds, sunflower seeds, cocoa powder, vanilla extract, and coconut oil into a food processor.

Blend all ingredients together until the mixture forms a sticky, dough-like consistency. Scrape down the sides of the food processor as needed to ensure everything is well combined.

Transfer the blended mixture into a mold (such as a loaf pan or square dish) lined with parchment paper. Press the mixture down firmly and evenly into the mold to create a compact layer.

Refrigerate the mixture for 1 hour to allow it to firm up.

Once chilled, remove the solid mixture from the mold by lifting it out using the parchment paper.

Place the firm block on a cutting board and cut it into desired shapes, such as bars or squares.
