Place the 170g imitation crab into a mixing bowl. Use kitchen shears or your hands to shred the imitation crab into thin strips.

Add the 3 Laughing Cow cheese wedges and the 2 soft boiled eggs to the bowl with the shredded crab. Use a fork to mash the soft boiled eggs, breaking them down and mixing them slightly with the crab and cheese.

Add 2 servings of 1/2 fat mayo to the mixture. Add sriracha to the mixture according to your preference for spice. Thoroughly mix all the ingredients in the bowl until well combined and the eggs are fully mashed into the mixture.

Take 2 cucumbers and slice each one lengthwise, creating a total of 4 cucumber halves. Using a spoon, carefully scoop out the seeds from the center of each cucumber half, creating a trough for the filling. Pat the cucumber halves dry with a paper towel to remove any excess moisture.

If desired, add 50g of cooked rice into the hollowed-out trough of each cucumber half, spreading it evenly.

Spoon the prepared spicy crab filling generously into each cucumber half, on top of the rice if used, or directly into the cucumber trough.

Finish by sprinkling everything bagel seasoning over the top of each filled cucumber boat. Enjoy your spicy crab boats immediately.
