In a small bowl, whisk together the honey, soy sauce, rice vinegar, minced garlic, grated ginger, sesame oil, and optional red pepper flakes. In a separate tiny bowl, combine the 1 teaspoon of cornstarch with 1 tablespoon of water to create a slurry; set aside.

Heat the vegetable oil in a large non-stick skillet or frying pan with a lid over medium-high heat. Once hot, place the frozen potstickers in a single layer, flat-side down, ensuring they do not touch.

Cook the potstickers for 2 to 3 minutes, or until the bottoms are golden brown and crispy. Do not flip them.

Carefully pour 1/2 cup of water into the skillet. Immediately cover the skillet with the lid and reduce the heat to medium-low. Allow the potstickers to steam for 8 to 10 minutes, or until the water has evaporated and the potstickers are tender and cooked through.

While the potstickers are steaming, pour the honey soy sauce mixture into a small saucepan. Bring to a gentle simmer over medium heat, then whisk in the cornstarch slurry. Cook, stirring constantly, for 1 to 2 minutes, or until the glaze has thickened to your desired consistency.

Once the potstickers are cooked and the water has evaporated from the skillet, remove the lid. Pour the thickened honey soy glaze directly over the potstickers in the skillet. Gently toss the potstickers to coat them evenly with the glaze.

Remove the glazed potstickers from the heat and transfer them to a serving platter. Garnish with toasted sesame seeds and thinly sliced green onions. Serve immediately as a delicious appetizer.
