In a large jar, combine the drained ciliegine mozzarella balls, dried oregano, finely chopped garlic, lemon zest, finely chopped sun-dried tomatoes, julienned fresh basil, chopped fresh parsley, chopped fresh rosemary, and red pepper flakes. Add a pinch of salt if needed, to taste.

Pour enough olive oil into the jar to completely cover the mozzarella balls. This should be approximately 2 1/2 to 3 cups of olive oil.

Securely cover the jar with its lid and shake vigorously until all the ingredients are well combined and the mozzarella is evenly coated with the herbs and oil.

Refrigerate the marinated mozzarella for at least 30 minutes to allow the flavors to meld. For best results, marinate for a longer period, up to 1 week.

Serve the marinated mozzarella with crostini or sliced bread. It can also be tossed into cooked and cooled pasta for a delicious dish.
